[edit]A paragraph I just removed from the page:
The word OSETRA derives itself from the Russian word ОСЕТР (osetr) which means sturgeon. In Russia there are many types of sturgeons including: Russian sturgeon (Acipenser gueldenstaedtii) Siberian sturgeon (Acipenser baerii), Siberian Sturgeon (Acipenser persicus )and white sturgeon (Acipenser transmontanus, meaning "sturgeon beyond the mountains")in the Alieutan Island. Therefore, whenever the word osetr (osetra in international transcription) is being used, it is referred to these above mentionned types of sturgeons. That is why when the Black Caviar is called Osetra, it should be referring to those sturgeon.
In addition to being badly written, it looks editorial. I can't really judge; I'm not a caviar expert or a Russian speaker. That's why I moved it here; if people think this information should be in the page, feel free to put it back. Tahnan (talk) 21:00, 31 December 2009 (UTC)
