[edit]First of all, welcome to the world of editing for Wikipedia. Terrific to have someone knowledgable in the food science area, since the material is topical and the technicalities are not widely known.
Looking at your recent edits, my main suggestion is that you cite secondary sources (books, reviews). The official guideline is WP:secondary. Primary references (journals, etc) are often too specialized for an encyclopedia, although they are ideal for technical journals (which Wikipedia is not). Yes, many journal articles are cited here, but edits are more impactful when they cite broader sources, because their information is more contextualized than journal articles.
Back to the main message: many helpful editors inhabit this space and can offer advice or guidance. If you are unsure, the talk pages of articles are ideal places to discuss your editing ideas and plans. Or to complain about content etc. Best wishes,--Smokefoot (talk) 04:44, 22 June 2010 (UTC)
