Bao du is a famous "Beijing cuisine".[1] It is always cooked and sold by the Hui nationality.[2] It has a long history. It was first recorded in Qing dynasty.There are many restuarants and street pedlars selling it in Beijing. Bao Du Feng is a traditional and well-known restuarant. http://baike.baidu.com/view/165579.htm Bao du Feng :established in 1881, also known as Ji Sheng Long. What is Bao du? It always made of beef's tripes.First cutting tripes into slices,then frying them as quick as possible in the boiling water .At last ,you shoud dip them into a special sauce. The sauce is mixed by soy sauce,sesame paste,vinegar,pungent sauce,fermented bean curd,coriander powders,chopped green onion and etc. Bao du is fresh and tender.It tastes crisp,fragrant and pleasant.
