Ox or cows?

Well, 'cow' is often used as a general term, including both sexes; maybe 'bovines' would be better. 'Ox' is also sometimes used generically rather than specifically (a castrated male draught animal). OTOH, why is ox-gall restricted to male in the first place? Are male gall-bladders different from female?
