1. Well-written:
1a. the prose is clear, concise, and understandable to an appropriately broad audience; spelling and grammar are correct.
1b. it complies with the Manual of Style guidelines for lead sections, layout, words to watch, fiction, and list incorporation. Wikipedia:Manual of Style#Images - Far too many images here.
2. Verifiable with no original research:
2a. it contains a list of all references (sources of information), presented in accordance with the layout style guideline. A lot of original research.
2b. reliable sources are cited inline. All content that could reasonably be challenged, except for plot summaries and that which summarizes cited content elsewhere in the article, must be cited no later than the end of the paragraph (or line if the content is not in prose). A lot of original research.
2c. it contains no original research. The follwoing sections contain original research and sources and inline citations should be added:

Japan - "Sushi and sashimi are widespread across the island nation."

Europe - "(This is analogous to Westerners referring collectively to the cuisines of East Asian countries as Asian cuisine.) When used by Westerners, the term may sometimes refer more specifically to cuisine in Europe or continental; in this context, a synonym is Continental cuisine, especially in British English."

Regional cuisines (Spain) - "Spanish cuisine has many diverse regional cuisines based upon differences in geography, culture and climate. It is heavily influenced by seafood available from the waters that surround the country. Spain's extensive history with many cultural influences has led to an array of unique cuisines with literally thousands of recipes and flavors."

"Taramosalata, a Greek meze made with salted and cured fish roe."

Caribbean - "These traditions were brought from the many homelands of this region's population.[80] In addition, the population has created styles that are unique to the region."

Panamanian cuisine - "reflecting its diverse population."

By region (Mexico) - "and simple tlayudas, while the mountainous regions of the West (Jalisco, etc.) are known for goat birria (goat in a spicy tomato-based sauce).

Central Mexico's cuisine is influenced by the rest of the country, and also has unique dishes such as barbacoa, pozole, menudo and carnitas.

Southeastern Mexico is known for its spicy vegetable and chicken-based dishes. The cuisine of Southeastern Mexico has a considerable Caribbean influence due to its location. Seafood is commonly prepared in states that border the Pacific Ocean or the Gulf of Mexico, the latter having a famous reputation for its fish dishes, à la veracruzana.

In pueblos or villages, there are also more exotic dishes, cooked in the Aztec or Mayan style (known as comida prehispánica) with ingredients ranging from iguana to rattlesnake, deer, spider monkey, chapulines, ant eggs, and other kinds of insects.

Recently other cuisines of the world have acquired popularity in Mexico, thus adopting a Mexican fusion. For example, sushi in Mexico is often made with a variety of sauces based on mango or tamarind, and very often served with serrano-chili-blended soy sauce, or complimented with habanero and chipotle peppers."

By region (United States) - Too much to quote in this section, a lot of un sourced material here.

Also look at Australia and New Zealand, there is a lot of original reasearch in these sections as well.


3. Broad in its coverage:
3a. it addresses the main aspects of the topic.
3b. it stays focused on the topic without going into unnecessary detail (see summary style). Excessively long, could be shortened.
4. Neutral: it represents viewpoints fairly and without editorial bias, giving due weight to each. Until sources are provided for some of the claims outlined above, then no, there article is possibly bias.
5. Stable: it does not change significantly from day to day because of an ongoing edit war or content dispute.
6. Illustrated, if possible, by media such as images, video, or audio:
6a. media are tagged with their copyright statuses, and valid non-free use rationales are provided for non-free content. Every single image is fine, but there are too many!
6b. media are relevant to the topic, and have suitable captions. All captioned.
7. Overall assessment. ☒N Quick fail Sorry, but these issues can't be resolved in a week. The article may need to be shortened, there are far too many images and there are unreferenced claims. When these issues have been corrected, then re-nominate the article.
