The basic concept I see is there are many different precooked dishes and customers pick the items they want. The distinguishing factor is unlike an "all you can eat buffet" the price depends on what you take and usually how much you take.

It often works out quite cheap (maybe even cheaper than doing it yourself). The bigger stalls typically get better economies of scale - they can buy and prepare items at wholesale costs.

I'm not sure about the history of this. I've seen "economy rice" stalls in Taipei too. Maybe India also has a similar thing. 60.48.224.159 (talk) 09:00, 8 June 2009 (UTC)[reply]
