Paakashala is a chain of Indian vegetarian restaurants founded in 2018 by KN Vasudeva Adiga, a well-known figure in the Indian culinary industry. The restaurant chain is recognized for its diverse vegetarian menu and its presence in major cities across India, including Bengaluru, and has expanded internationally to Singapore.[1]

Brahmin's Coffee Bar: The Foundation

The roots of Paakashala can be traced back to the inception of Brahmin's Coffee Bar in Shankarapuram by Nageshwara Adiga, father of Vasudeva Adiga, in 1965.[2] Brahmin's Coffee Bar started as a humble establishment serving traditional South Indian delicacies and beverages, quickly gaining popularity under Nageshwara Adiga's stewardship.[3]

Vasudeva Adiga: A Culinary Journey

While initially pursuing a different path, Vasudeva Adiga ventured into the food business after being denied a visa for higher education abroad. In 1991, he established SLV (Sri Lakshmi Venkateshwara) Fast Food, marking the beginning of his entrepreneurial journey in the culinary realm.

In 1993, Vasudeva Adiga founded the first Adiga's restaurant on DVG Road, Basavanagudi, expanding his family's culinary legacy. Over time, the brand transitioned from Adiga's to Vasudev Adiga's, reflecting Vasudeva Adiga's vision of establishing his family name in the industry.[4]

Partnership with New Silk Route Venture Capital

In 2012, Vasudeva Adiga partnered with New Silk Route Venture Capital from New York to expand his restaurant chain further. This collaboration led to the exponential growth of Vasudev Adiga's brand, with the number of outlets increasing from 13 to 30 across various locations. [5]

Despite initial success, challenges arose within the partnership, prompting Vasudeva Adiga to relinquish his stakes in Vasudev Adiga's Fastfood Pvt Ltd in August 2017. [6] [7] Undeterred, Vasudeva Adiga embarked on a new chapter in his culinary journey, laying the groundwork for the emergence of Paakashala.

In 2018, Vasudeva Adiga launched Sri Anantheswara Foods Pvt Ltd and introduced a new restaurant chain called Paakashala. "Paakashala," meaning "cooking school" in Sanskrit, reflects Vasudeva Adiga's commitment to culinary excellence and innovation.

Rapid Expansion and Acquisitions

Paakashala swiftly gained momentum, with six units opening within its inaugural year. Additionally, Vasudeva Adiga acquired the Nandi Upachar chain as part of his expansion efforts, further solidifying his presence in the food industry.[8]

Paakashala enhanced its reputation by appointing actor and food enthusiast Sihi Kahi Chandru as its brand ambassador. Chandru's deep appreciation for the famous dipped idlis served at Adigas, owned by KN Vasudev Adiga, led to this collaboration. Inspired by his friend's entrepreneurial adventure, Chandru proudly accepted the post at Paakashala, impressed by its growth and commitment to quality. [11]
