Sodium metabisulphite

[edit]

I have noticed that quite often, sodium metabisulphite is listed as a preservative on food ingredient lists. Does any one know about this? As I am neither a food scientist nor a chemist (my occupation is to lecture in psychology}, I would not like to alter this category myself.
