Anh Sung-jae

From Wikipedia, the free encyclopedia

Anh Sung-jae (Korean안성재[1]) is a South Korean chef. His restaurant, Mosu, was awarded the rare distinction of three Michelin stars in 2022.[2] He was one of the two judges for the 2024 cooking contest, Culinary Class Wars.[3][4]

Anh was born in South Korea but grew up in California where his parents ran a Chinese restaurant. He served in the US Army as a mechanic and, after leaving the army, started a career in catering.[5]

He apprenticed at fine dining restaurants including Urasawa and The French Laundry and then started his own restaurant in San Francisco. This was called Mosu, from the word kosumosu which means Cosmos blossom in Korean. He has since moved his restaurant to South Korea and Hong Kong.[5]

His style of fine dining is a fusion of Asian cooking with Korean fermented ingredients presented in the classic mode of French haute cuisine.[6]
